Most mornings, I crave something salty. If I indulge in something besides green juice, I usually chow down on something like tofu scramble or a nutty Kind bar.
But, this morning, when my husband asked me what I wanted for breakfast, the first thing that popped into my mind was muffins. I pulled out my Babycakes cookbook and found the blueberry muffin recipe. We substituted gluten-free all purpose flour for the whole spelt flour. I was feeling under the weather, so my husband made them for me while I slept in. He’s the best!
