My husband and I used to eat sandwiches a lot more in our carnivore stage. It took us a while to find bread that we really liked that was both vegan and gluten-free. Now, that we’ve discovered some that we love, sandwiches have become more common around our household, especially if we want something quick that’s also filling and delicious.
Ingredients {for two sandwiches}:
4 slices deli-style bread {gluten-free and vegan}
1/2 pepper, sliced
tomato, thinly sliced
6 romaine lettuce leaves
1/2 cucumber, thinly sliced
1/3 cup Daiya shredded mozzarella cheese
1/3 cup Vegenaise
teaspoon of hot sauce
2 tablespoons of bacon bits {vegan!}
Directions {for two}:
1. Toast the bread.
2. In a small bowl, mix together the Vegenaise and hot sauce.
3. Slather two slices of bread with the Vegenaise mixture.
4. One the other two slices of bread, spread with mozzarella shredded cheese and sprinkle the “bacon” bits on top. Heat in the microwave for about thirty seconds on medium-high heat to melt the “cheese.”
5. Layer half the veggies on each sandwich. {Cut in half if you like your sandwiches cut.}

This looks delicious. I really want to learn how to make gluten free/vegan break from scratch. I’m a little intimidated though. I’m barely nailing the pizza dough.
Me, too! We have a bread maker that we haven’t used yet…and I’m embarrassed to say that we’ve had it for over a year. Yikes! We’ve had a hard time finding GOOD vegan and gluten-free bread recipes.
