Looking for a healthy lunch that’s almost raw? I’ve got one for you, and it’s actually quite yummy. The flavors all mesh really well together and it’s super easy to throw together if you don’t have a ton of time. My husband really enjoyed these, so if you’ve got a man at home that you want to eat healthier, get him to taste these wraps.
Ingredients {for two people}:
6-7 romaine lettuce leaves {I had three and my husband had four.}
2 tomatoes, sliced into strips
1 ripe avocado, sliced into strips
1/2 cup of shredded carrots
handful of raisins
3 tablespoons of Vegenaise
1 tablespoon of EVOO
1 teaspoon of cumin
salt and pepper to taste
Directions:
1. Mix up the Vegenaise sauce by combining the Vegenaise, EVOO, cumin, salt and pepper in a small bowl. Stir until thoroughly combined.
2. Place the romaine lettuce leaves so the side are curling up on a plate.
3. Fill the leaves with tomato, avocado, and shredded carrots. Sprinkle raisins on the top.
4. Add a few dollops of the Vegenaise mixture and enjoy!
