Spinach and Artichoke Grilled Cheese: Vegan and Gluten-Free

Ingredients {for 2 sandwiches}:

4 slices of gluten-free, vegan bread

Earth Balance buttery spread

1/2 can of artichoke hearts, chopped

2 big handfuls of baby spinach leaves

2-3 garlic cloves, finely chopped

Daiya shredded mozzarella cheese

3 tablespoons of Vegenaise

1 tablespoon of EVOO

Directions:

1. Heat a sauté pan on medium. Add the EVOO, chopped artichoke hearts and garlic. Sauté, while stirring regularly, for three to four minutes.

2. While that’s sautéing, butter one side of each slice of bread with the Earth Balance buttery spread.

3. Add the spinach to the artichokes and garlic and wilt.

4. Remove the pan from the heat and stir in the Vegenaise.

5. Heat another sauté pan on medium heat.

6. Place two slices of bread, buttery side down, in the pan. Sprinkle with Daiya mozzarella cheese, add half the spinach/artichoke mixture and sprinkle with some more of the vegan cheese. Top with the other slice of bread–buttery spread side up. Repeat for the other sandwich.

7. Check after two minutes. If browned, flip and brown the other side for about two to three minutes.

      Yay!!! Seriously…there are some super yummy alternatives for vegans like Daiya cheese. So good!
