Just because you’re vegan and allergic to {or avoiding} gluten doesn’t mean you can’t have fun!
Do you remember eating muddy buddies as a kid? The delicious peanut butter and chocolate coating sprinkled with powdered sugar that melts in your mouth…yum! Try this version when you’re craving a peanut butter cup.
Ingredients:
9 cups Corn Chex cereal
1 cup semisweet vegan chocolate chips (we used the minis)
1 cup crunchy peanut butter
1/4 cup vegan butter
1 teaspoon vanilla extract
1 1/3 cups powdered sugar
parchment paper
gallon size ziplock bags
Directions:
1. Put the Chex in a large bowl and set aside.
2. Place the chocolate chips, peanut butter and butter in a medium microwave safe bowl. Microwave on high for about 40 seconds, stir and microwave for an additional 40 seconds and stir again.
3. Pour the chocolate mixture over the Chex and fold in until coated.
4. Divide the Chex mixture evenly into two gallon size ziplock bags and put 2/3 cup of powdered sugar in each bag. Shake!
5. Pour onto parchment lined baking sheets and allow to cool for about 15 minutes. Store in an airtight container in the fridge.
